Recipe: Tortilla Soup

I made tortilla soup this weekend.  It was delicious!  This is a great slow cooker/crockpot recipe.  This lasted us all weekend and for the second day I just put it on warm for the whole day and was always ready to go! 


  • 1 lb shredded chicken
  • 2 cups chicken broth
  • 2 cups water
  • 1 can black beans
  • 1 small bag of sweet corn
  • 1 can of stewed tomatoes
  • 1 can enchilada sauce
  • 1 onion
  • 1 tsp cumin
  • 1 tbsp coriander
  • 1 tsp chili powder
  • 1 tsp paprika (this one I added on accident because I thought it was the chili powder, but it was a delicious accident)
  • 1 tsp salt
  • dash of pepper

How to make shredded chicken:

Place chicken in a pot.  Cover with enough water to cover the chicken.  Bring to a boil.  Let boil for about 10ish minutes.  Take chicken out and shred (I used two forks for this)

Soup Prep:

Place all ingredients in your slow cooker or crockpot.  Cook all day.  Enjoy the deliciousness!

Things to try:

  • Add cilantro (cilantro makes everything better)
  • Top with some shredded cheese
  • Add a little sour cream
  • Crumble some tortilla chips in the soup
  • Try adding in some other veggies that you think will go well

    i have all the ingredients and soup in on this week!! i don’t have a crockpot … mine has died … but will be home this tues and weds so will simmer it on the stovetop (the ol’fashion way!) will let you know the reviews 🙂
